A Nutrition Facts panel looks like a summary of a food. It is closer to a legal document: every line has a defined meaning, a rounding rule and a reason for existing, and several of them mean something narrower than the plain English suggests.
Learning what each line is actually required to say takes one read. After that you stop being misled by the two lines that mislead almost everyone — serving size and percent Daily Value — and you can get an accurate figure off a package in a few seconds.
This article explains a labelling system, not a diet. Nothing here is medical or dietary advice and no figure on a label is a recommendation for you. Talk to a doctor or registered dietitian about your own intake, especially if you are pregnant, managing a condition or taking medication.
Start at the top: servings, not portions
The two lines above the black rule govern everything below them, and they are the most commonly misread part of the panel.
Servings per container tells you how many label-servings are in the package.
Serving size tells you how much one of those is. It is not a recommendation. FDA derives serving sizes from Reference Amounts Customarily Consumed — regulated amounts based on what people typically eat in one sitting, published as a table in 21 CFR 101.12. The whole point is comparability: two brands of the same food have to declare their numbers against the same reference amount so you can put them side by side.
Two rules that follow from this are worth knowing because they change what you are looking at:
- A package containing between one and two reference servings must be labelled as a single serving, because people generally finish it in one sitting.
- Certain packages containing between two and three reference servings carry a dual-column label, showing the figures both per serving and per package.
So a bottle you drink in one go is usually declared as one serving now, and a container you might split shows you both columns. When neither applies, the arithmetic is yours: two-thirds of a stated serving means two-thirds of every number underneath it.
Calories, and where they come from
The calorie figure is large on the modern panel because FDA enlarged it deliberately in the 2016 redesign, which also removed the old "Calories from Fat" line.
Calories are not measured in a bomb calorimeter for every product. FDA's regulations permit calculation using specific food factors or the general factors of 4 calories per gram of protein, 4 per gram of total carbohydrate and 9 per gram of fat, with separate treatment for alcohol and for certain sugar alcohols. That is why the calorie line and the gram lines on a panel are arithmetically related rather than independent measurements — and why a food's calorie count moves when a manufacturer reformulates the grams.
The nutrient lines, and the rounding underneath them
Below calories, the panel declares nutrients in grams or milligrams, with some nested underneath others.

Every one of those figures is rounded under 21 CFR 101.9, and the rounding is where quiet inaccuracy lives:
- Calories — under 5 may be declared as zero; up to 50, to the nearest 5-calorie increment; above 50, to the nearest 10.
- Fat — under 0.5 g may be declared as zero; from 0.5 g to 5 g, to the nearest half gram; above 5 g, to the nearest gram.
- Sodium — under 5 mg may be declared as zero; from 5 mg to 140 mg, to the nearest 5 mg; above 140 mg, to the nearest 10 mg.
None of that is a loophole. It exists so labels stay readable and so tiny amounts do not imply false precision. The consequence is real, though: a splash of cream, a spray of oil, a stick of gum and a seasoning packet can each honestly declare 0 g and still contribute to your day. If you count to a tight target, small servings are where your log and your intake quietly diverge — the same effect that makes two apps disagree on net carbs for the same food.
Fiber, sugars and added sugars
Dietary fiber and total sugars sit inside total carbohydrate rather than beside it, because on a US label total carbohydrate is generally calculated by difference rather than measured directly.
Includes Added Sugars is the newest line and the most useful one on many packages. It separates sugars introduced during processing or packaging from those naturally present in the food, which is the distinction that makes a fruit yogurt and a plain one legible next to each other. FDA set the Daily Value for added sugars at 50 grams, which at 4 calories per gram is 200 calories — 10 percent of a 2,000 calorie reference diet.
Percent Daily Value: the most useful line, misread constantly
The right-hand column is not "percent of what you need". It is the share of a Daily Value that one serving supplies, and Daily Values are reference figures pegged to a 2,000 calorie diet so that products can be compared on one scale. FDA states plainly that this reference diet may not match your own calorie needs.
Used as intended, it is the fastest tool on the panel. FDA's own quick guide is a single sentence worth memorising: 5 percent DV or less is a low amount of that nutrient, and 20 percent DV or more is a high amount. You can triage a shelf with that rule without doing any arithmetic at all.
The adult Daily Values also turn out to be internally coherent, which is a good sanity check on the whole system:

Compare the first three against the National Academies' Acceptable Macronutrient Distribution Ranges for adults — 45 to 65 percent of calories from carbohydrate, 20 to 35 percent from fat and 10 to 35 percent from protein — and the Daily Values sit mid-range for carbohydrate, at the top for fat and at the bottom for protein. The label's yardstick was built to be consistent with the reference intakes, not invented separately.
Protein is the exception in one respect: a %DV for protein is not required on most panels. It appears when a protein claim is made or for foods represented for children under four, and when it does appear FDA requires it to be corrected for digestibility rather than taken straight from the gram figure. A blank in that cell is normal.
Below the panel: ingredients, allergens and claims
The ingredient list is ordered by weight, most to least. That ordering is often more informative than any single number above it — if a sweetener appears in the first three ingredients, you have learned something the panel expresses less directly.
The allergen statement. FDA identifies nine major food allergens that must be declared on packaged foods: milk, eggs, fish, crustacean shellfish, tree nuts, peanuts, wheat, soybeans and sesame. This is the only part of the package that carries real safety weight for some readers, and it is separate from the nutrition panel entirely.
Front-of-pack claims are governed by their own rules. Under FDA's nutrient content claim regulations, terms like "high", "good source", "low", "reduced" and "free" have numeric definitions tied to the Daily Value and the reference serving. "High" or "excellent source" means 20 percent or more of the DV per reference serving; "good source" means 10 to 19 percent. So "excellent source of protein" is a claim about clearing 10 grams against the 50 gram DV, and what a protein claim is really asserting becomes checkable arithmetic rather than marketing atmosphere.
A claim on the front never tells you more than the panel on the back. It tells you which number the manufacturer wanted you to look at.
What the label cannot tell you
Worth stating plainly, because label literacy is sometimes oversold.
- It does not evaluate the food. Composition is not a verdict, and a panel has no opinion about whether something fits your diet.
- It is not personalised. Every percentage is against a 2,000 calorie reference. If your intake is materially different, the percentages are still comparable between products and no longer meaningful as fractions of your day.
- It is a snapshot of a formulation. Recipes change. The panel on the package in your hand outranks any database entry captured months ago.
- It is rounded. Everything above applies before you add up ten small servings.
